Ingredients for Biscuit Base:

Marie Crackers or Graham Crackers or Plain Biscuits – 200 Gms

Unsalted Melted Butter – 120 Gms

Ingredients for Cheesecake Filling:

Softened Cream Cheese – 500 Gms

All Purpose Flour – 2 tsp.

Sour Cream – 125 Gms

Vanilla Extract – 1 tsp.

Superfine Sugar or Caster Sugar – 330 gms

Eggs – 3

Lemon Zest of 1 Whole Lemon

Procedure to Make Cheesecake:

STEP 1: Prepare the Pan

  • Preheat the oven to 160 degree Celsius or 320 Fahrenheit.
  • Take 20 cms or 8 inches spring foam cake tin and turn the base upside down to butter lightly and place a square parchment or baking paper. Now clip the spring foam pan/tin.
  • Also, butter and line the sides.

Step 2: Prepare the Biscuit Base

  • Break the biscuits or crackers with hand and then put them in a food processor and get fine crumbs.
  • To this powdered biscuits/crackers now add butter and give a mix.
  • Place this mixture into the cake tin and use a spatula to spread the base evenly. Some prefer to place the crumbs to the walls of the cake tin.
  • Press the crumbs several times so that you get a proper base.

Step 3: Prepare the Filling

  • Take the cream cheese and use a mixer or beater to beat the cream cheese on medium to high speed so that you get a fluffy and smooth cheese.
  • Now, add the required amount of flour and beat for 10 seconds maximum.
  • Add sour cream, lemon zest, vanilla extract, and sugar and beat them together for 10-15 seconds until they combine perfectly.
  • Now, add eggs one at a time and beat them well for 10 seconds each.
  • Pour this filling on the already prepared crust and insert into the pre-heated oven to bake for 55 minutes.
  • Cool down the cake and then refrigerate for 4 hours minimum before serving to your guests and family members.
  • It can be topped with the seasonal favorite fruits or berries.
